- Ripe avocado
- Cherub or cherry tomatoes
- Salt and pepper
- Essential vinaigrette (made with white balsamic vinegar)
Slice the avocado in half. Remove the pit. Cut into thick slices. Cut the tomatoes in half. Finely mince the shallots.
In a bowl, mix together the shallots, tomatoes, salt, pepper and vinaigrette. Gently fold in the pieces of avocado. Do not overmix as your avocado slices will begin to turn to mush. Mush is not desirable. Why? Mush is not pretty.
