Easy little side dish, but you have to plan ahead for maximum flavor!
- Fresh button mushrooms
- Essential Vinaigrette or bottled Italian dressing
Cut the hard ends off white button mushrooms. Bring a large pot of water to a boil. While waiting for it to boil, get out a large bowl and fill it with ice and water.
Place the mushrooms into the boiling water for somewhere between 30 seconds and 1 minute. Quickly remove the mushrooms and plunge them into the ice water bath to stop the cooking. Drain through a colander.
Toss the mushrooms with your vinaigrette (I used white balsamic vinegar in at the Essential Vinaigrette recipe.) Allow the mushrooms to sit at least 2 hours, preferably overnight, before serving.
