- 3 sweet potatoes, microwaved until done
- 1/2 cup diced red onion
- 1 bunch of green onions, finely chopped
- 1 cup chopped celery
- Equal parts coarse grain mustard and honey (I use sugar-free “honey”)
Microwave (or bake) your sweet potatoes. Scoop out the meat. Cut into chunks.
Dice and slice your onions (red and green)
Mix the dressing ingredients. Put the two types of onion and the celery into the dressing. Mix well. Pour over the sweet potatoes immediately before serving.
