Tortilla pizzas are one of my favorite things in the entire world for a variety of reasons. They can be made with just a handful of ingredients. If you make them with the low carb tortillas, they have few carbs. They’re light, they’re crisp, they’re so delicious — and they cook in nothing flat.
Ingredients:
- Fresh figs, sliced as thinly as you can
- Onions, carmelized
- Olive oil
- Gorgonzola cheese crumbles
- Flour tortillas (low carb ones, preferred)
Directions:
Preheat your oven to 425 degrees.
Place the tortillas on a cookie sheet. Spread a little olive oil on the top of each one. Place a dollop of carmelized onions in the center, then spread them around. Add the goronzola cheese crumbles to each one.
Very thinly slice your figs. (You could mince them, if you prefer.) Scatter around your tortilla tops. Bake at 425 degrees for 6 minutes or so, just until they are lightly browned and the tortilla is crisp. Slice into quarters or halves and eat with a nice salad.
