It’s nearly time for the first frost and you harvest so many green tomatoes — whatcha gonna do? Make fried green tomatoes, of course!
Ingredients:
- Green tomatoes, thickly sliced
- kosher salt
- cracked black pepper
- 1 egg
- 1/4 cup cream
- Grated parmesan cheese
- Shredded parmesan cheese
Mix together the egg and cream.
Beat it well with a wire whisk.
Thickly slice the tomatoes. They should be no thinner than 1/4 inch slices. Salt and pepper them.
Set up a breading station. Put the cream/egg mixture in one part and the cheese in another.
Put on your food prep gloves. We aren’t touching this stuff with our hands. ICK! Dip each slice of tomato into the egg/cream misture, then into the cheese. Coat well on both sides.
Heat your pan. Add the oil. Once the oil is added, gently place your tomato slices into the oil.
Cook until browned on both sides. Drain well on paper towels.
Serve whole, or slice into strips.
Here, I have used the strips of fried green tomatoes to garnish a platter of Tomatoes Grecian Style.
