Bacon-Wrapped Green Bean Bundles

Bacon-Wrapped Green Bean Bundles

Ingredients:

  • Haricot Vert (baby green beans). You can use regular instead, but you’ll need to steam them a while longer
  • Thinly sliced bacon strips
  • Garlic powder
  • Ginger
  • Soy Sauce
  • Butter
  • Brown Sugar (or I use Brown Sugar Diabetisweet)

Bacon-Wrapped Green Bean Bundless This is the type of green bean dish that is special enough to serve for company. I had purchased several big bunches of green beans, so I made one batch with shallots and roasted red peppers for us, and prepped the fancy Green Bean Bundles to be served to company that evening.

How can you go wrong when you’re able to combine bacon (especially when it’s crispy!) with a vegetable? Expand your green bean repertoire with this killer recipe. These are truly delicious.

Place a small dab of butter atop each bacon-wrapped bundle. Sprinkle on a small amount of garlic powder on each one.

Directions:
Fry up your bacon slices until they are almost completely cooked. Don’t overcook them, because you’re going to microwave the bundles with the bacon wrapped around them. Steam your green beans to the desired level of doneness. For me, that’s about six minutes in the microwave, but it will depend upon how many you’re cooking and how done you like them. Wrap a piece of bacon around a bundle of 10-12 steamed green beans. Secure with a toothpick.

Bacon-Wrapped Green Bean Bundles Step 3Sprinkle on a small amount of ginger on each one. Then just a bit of brown sugar (or substitute).

Microwave for about 15 seconds, then examine them. You want the bacon to look done, the butter to be melted. Microwave longer, if necessary. Add a dash of soy sauce to each bacon wrap, then microwave another 5-8 seconds.
