This is another fabulous Deloris creation inspired by a visit from her sister Leona and lime juice brought up from Florida. She puts in a little of this, a little of that. The only thing I can vouch for exact measurements on is the crust, because I use the same crust for some desserts I make. At any rate, this was truly flavorful and so rich that you only need a little bit!
Ingredients:
The ingredients are listed in 3 groups here — crust, bottom filling, top filling. Plus, don’t forget a littled whipped cream and a few lime slices on top!
- CRUST:
¾ cup finely chopped pecans
3 Tbsp. melted butter
3 Tbsp. sugar or Splenda
- Bottom Filling:
1 8 oz pkg. cream cheese, softened
1/2 cup sour cream
1/2 cup Splenda or sugar
Mix well. Spread on the thoroughly cooled crust.
- Top Filling:
1 small pkg. vanilla instant pudding (we use sugar-free)
1 cup half ‘n half
1/2 cup lime juice
Top with whipped cream and garnish with lime slices.
