Fresh Strawberries with St. Andre Cheese
Some evenings we come in from working out in the garden and we have no desire for a big meal (and certainly no energy to prepare one). Pair cold ripe strawberries with creamy, buttery St. Andre cheese. Who needs a meal?!?
Garlic Bread and Tomatoes
This is such a satisfying combination. Make (or buy) your favorite garlic bread. (I sliced low carb hot dog buns thinly, then spread on a mixture of softened butter, parsley, garlic powder, onion powder, and a little cayenne. I topped some with a 5-Cheese Italian blend.) Stick in the oven at 400 degrees for a few minutes. Arrange on your plate and serve with sliced tomatoes, fresh from the garden.
Grilled Cheese Bites
Recently, when we had workers outside working on a project, I could tell their energy was flagging. I didn’t have anything ready to eat in my fridge and little time to cook, but I came up with something that brought a big smile to their faces — hot, buttery toasted cheese sandwiches. Use your favorite bread (I used thin slices cut from the inside of low carb hot dog buns!). The key is to use a yummy, good melting cheese inside — whether its American, Swiss, Gruyere, and cook the sandwiches in butter. I had the induction burner set at 350 degrees, and that seemed to be perfect. I melted the butter, placed the sandwiches on top, then added more butter right before I flipped them. I used my pizza cutter to cut them into finger-sized sandwiches (no plate necessary!) and added a cherry tomato and colorful toothpick to make them even prettier.
