These are light, yet satisfying, and so pretty, too.
Ingredients:
- Little tubs of sugar-free vanilla pudding in the individual serving size (usually in the refrigerator section of the supermarket)
- Whipped cream, sugar-free
- Fresh berries of your choice
- Mint for garnish
Directions:
Place a small tub of pudding into a sealable baggie. For purposes of this recipe, one tub will be enough for 3 desserts. Squirt a healthy dose of sugar-free whipped cream into the bag. Mix well.
Reserve a few berries that you leave whole. Take the rest and either mash your berries and add them by hand to a small bowl of whipped cream, or place the berries into a mini food processor, chop them a bit, then add the whipped cream. Taste a small bite. You may need to add a little Splenda if your berries were tart. Place mixture into a sealed baggie.
Pretend you’re a geologist and make formations in your little shot glasses. Cut a small piece of the corner of your baggies. Squirt in the pudding/cream mixture. Then the berry/cream mixture. Then place whole or halved berries in, then repeat. Top with a squirt of whipped cream, a couple of berries, (a piece of berries if you are using strawberries) and a piece of mint.
If it took you more than 10 minutes to make this, have a little more caffeine. This is quick stuff!
