- Low carb cake, cut into squares*
- Whipped cream
- Assorted fresh berries
- Toothpicks
- Fresh mint for garnish
Directions:
Cut your cake into squares. Pull out your whipped cream dispenser and squirt on a big hunk of sugar-free whipped cream on top of each one. Spear a berry with a toothpick and plunge it into the cake. You’re done!
* In terms of low carb cakes, you have several options. Make your own, if you have time. Use one of the Pillsbury sugar-free cake mixes if you need to speed the process up a bit. (It’s more carbs than you might get if you had made a low carb cake from scratch, but it’s sugar-free and you can exercise a little moderation in terms of what you eat. Can’t you?) Option 3 is to use the low carb sugar free TastyKakes in the Orange Finger Cake variety.
Here’s the deal: If you put a big honking piece of cake in front of your guests, they’re going to eat a big honking piece of cake. Then they’re going to be unhappy with you for doing that to them. On the other hand, if you offer the option of these bite-sized morsels of bliss, it’s doubtful a guest is going to try to acquire enough to feed the football team. In essence, you’re establishing the reasonable portion size for them.
