I can have our Tilapia Quick and Easy dish on the table in 10 minutes or less. It’s fast food that’s actually packed with nutrition and it features a complex mix of tastes that add up to a big “Wow” on the flavor meter. You will want to savor each and every bite.
Ingredients:
- 4 tilapia filets
- 1/2 cup cherry or cherub tomatoes
- 1/2 cup thinly sliced red onion
- 1/2 cup thinly sliced colored peppers
- 1 tsp. garlic
- olive oil
- salt & pepper
- fresh herbs (I used thyme and rosemary, finely chopped)
Directions:
Slice up your onion and colored peppers and cut your tomatoes in half. Put them in different prep bowls, or at least put them in different piles on your cutting board. You’ll need to be able to use them one at a time and the cooking goes quickly, so have this part done first.
Put a couple of drops of olive oil on each side of each tilapia filet, then lightly salt and pepper each one.
Heat a skillet to about 340 degrees (medium). Gently place the fish in. Allow the fish to cook 2 to 3 minutes on one side, then gently turn the fish pieces in order to cook for another 2-3 minutes on the second side. The fish should look opaque white and be fork tender. Remove it from the skillet, put the fish on a plate, then turn up the heat in the skillet to medium high.
Put 1 teaspoon of olive oil in the skillet, followed by the garlic. Saute for a minute or so, stirring just a bit with a spatula, then add the sliced onions. After 30 seconds or so, stir again before adding the sliced peppers. In another minute, add the tomatoes. Saute another minute, then add the herbs. If they are finely minced herbs, they don’t need long. Don’t overcook the vegetable mixture!
Place the cooked vegetables on a serving platter (or plate them for each person individually). After the vegetables are on the plate, top with the fish pieces. Garnish with herbs. Enjoy!
