Air Fryer Berry Cobbler

The air fryer is the perfect tool for getting a hot, homemade dessert on the table in minutes.  This air fryer berry cobbler can be made with whatever combination of berries you choose.  With just six ingredients, you can put it together with no trouble and the payoff is sooooo sweet!

This can serve four, at least theoretically, and can be served naked, or with whipped cream or ice cream.

You will need a 5″ oven safe cake pan that will fit inside your air fryer.  (Don’t have an air fryer?  You need one.  In the meantime, you could preheat your oven to 350 and bake this for half an hour.  It takes much less time and effort in the air fryer.  Go. Buy. One.)

Ingredients:

  • 2 cups berries (blackberries, raspberries, blueberries, or any combination of the three)
  • 1 cup almond flour
  • 1/2 stick butter, melted
  • 1/2 tsp. vanilla
  • 1 egg
  • 1/2 cup Splenda or sugar, plus another tsp. for sprinkling, as explained below

You will also need a piece of aluminum foil.

Directions:

Start preheating the air fryer to 350 degrees.  It needs to preheat for just two minutes, which gives you enough time to get the cobbler ready.

Place the berries in your 5″ pan.  Sprinkle 1/2 tsp. of Splenda or sugar on top.

Mix together the remaining ingredients (almond flour, vanilla, the 1/2 c. portion of Splenda or sugar, egg, melted butter).  Drop by dollops with a big spoon on top of the berries.

Then use the spoon to smooth the batter around so that it covers the entire top.

I like to poke the batter down between the berries a bit, so you don’t just end up with a layer of berries with a layer of batter on top.  Sprinkle the remaining 1/2 tsp. of Splenda or sugar on top.

Cover the pan with foil, wrapping it around to the bottom so it won’t be pulled off by the circulating air.  Cut an X shape into the top of the foil.  Put the pan in the air fryer and let it start cooking.  Set the timer for 10 minutes.

airfryercobblerOpen the air fryer after 10 minutes and tear the foil back so you can see how it looks.  It should be golden brown and if you poke around a little, the batter should look like it has baked through.  If it still looks a little raw, put it back in for a minute at a time until it reaches the desired level of doneness.  (One of the awesome things about an air fryer, as opposed to an oven, is that you can peek to your heart’s content and not wreak havoc with the cooking temperature.)

When it is done, you can simply slice into wedges and put on a plate, but since it crumbles a bit, I find that it is prettier to serve it in some other container.  Look around to see what you have — sherbet dish, fruit compote, margarita glass.  Experiment!   Figure it out ahead of time, if possible, because you will want to be ready to serve this when it is hot and ready.
