If fruits and vegetables were my children, the vegetables could rightly claim “Mama always liked you best.” It’s true. I play favorites. I suppose it’s therefore not surprising that I look for opportunities to sneak fruit into unexpected places. My friend Deloris started me down this delicious road and here you will find inspiration for adding fruit to YOUR salads, too!
The salad shown above has just five ingredients, but doesn’t it look amazing? Leaf lettuce, goat cheese, thin slices of red onion, avocado, and raspberries. Now THAT is a salad!
Blackberries with caesar salad? Why not! And a few pecan slivers, too. What a kick!
Most of this salad was thrown together from ingredients found in the salad bar section of Whole Foods, but the sliced strawberries from my fridge added a whole new dimension.
The salad above is a clever cheat. We had unexpected company for lunch and my frisee’ (curly endive) just wouldn’t stretch enough to serve four and I didn’t have enough other salad vegetables to pump it up. Nectarines and blueberries to the rescue. The result was one fine salad!
What else is in your fruit bin? Saddle up the pear slices. Harness bits of Granny Smith apple. Pomegranate seeds. What piece of the fruit universe will be the star of your net bowl of greens?
