It’s a fabulous combination — savory meat, creamy cheese, crunchy pickle. The ones pictured above are made with deli turkey slices. While not the prettiest of the three meat options, they are perhaps my favorite from a flavor standpoint.
Ingredients:
- any type of deli-sliced meat (ham, roast beef, turkey)
- sugar-free gherkin pickles, sliced into long, narrow pieces
- 8 oz. cream cheese, softened
- 1 pkg. Splenda(or 2 tsp. sugar)
- 1 tsp. dry Good Seasons dressing
Mix the Splenda, Good Seasons and cream cheese together. Spread cream cheese mixture on each slice of meat. Place two long, thin pickle slices on each piece. Roll up. Cut each meaty rollup into bite size pieces.
Tip: To get the sizes of the pieces even (which makes them look more attractive when you serve them), try lining up 4 or 5 of the rollups, then cut down the middle of each rollup That gets them into halves and it’s pretty easy from there to make the two additional cuts you need to get each roll cut into fourths because you just cut each half in half. Got it?
Sometimes I make these when I’m going to fly somewhere. Since they don’t feed you on the plane anymore, unless you’re flying first class, it’s nice to have something portable, high in nutrition, and really flavorful to tote along. Obviously, it can’t be a really long flight because you can’t have cream cheese out at room temp for too long.
These are always popular at parties, so make plenty!
For those who prefer savory, don’t sweeten the cream cheese mixture and use dill pickles instead!
