Sometimes I want just a little bite of something, but not necessarily just a single taste. I’ve been making cheese chips for years. I thought it might be fun to skip the taco shell and stack up taco ingredients on top, making a tiny tower of taco flavor. Yum!
Ingredients: All your favorite taco “fixin’s”! Here’s what I used:
- shredded cheddar cheese (for the cheese chips — Use the Skillet Cheese Chips recipe
- a little extra shredded cheese for the top (It would have been nice to have a white cheddar or monterey jack)
- ground beef, cooked and crumbled (you can put a little taco seasoning mix on while it’s cooking, if you like)
- lettuce, shredded
- tomatoes, finely sliced or diced
- red onion, minced
- avocado, small slices
- salsa
Directions:
Make your cheese chips and place them on your plate.
Assemble all your ingredients. Start by putting the cheese chips on the plate they’re going to be served on. Place lettuce on each chip as a base.
Firmly press the avocado slices into the lettuce. Sprinkle on the ground beef, then a tiny bit of cheese. You don’t need much cheese because the cheese chip is what the tower rests on. You’re mainly using a little more shredded cheese for texture and color.
Continue building your tower by adding the onion, the tomatoes, and finally the salsa.
Open mouth, pop in, chew. Smile. Repeat.
