Ingredients:
- Watermelon
- Feta cheese, crumbled
- Fresh mint
- Minced red onion
- Cracked black pepper
Directions:
Cut the watermelon into even sized squares. Use a small melon baller to scoop a small amount of fruit from the top of each square to create a well to hold the filling. Mix together feta cheese, chopped mint leaves, and a small amount of minced red onion. Use your pepper grinder to add some cracked black pepper. Taste the filling with one of the discarded scoop pieces. Adjust the ratio of mint, feta and onion to suit your taste. Using a small scoop, fill the watermelon squares with the cheese mixture.
As shown in the photo above, I also sometimes use small cookie cutters to cut the watermelon into shapes, rather than just doing squarea. Here, I make different butterfly shapes and used basil strips for garnish and flavor, rather than mint.
Very refreshing when the weather is hot and you aren’t in the mood for anything heavy.
