They say “Necessity is the mother of invention.” Well, I salute you Mother Necessity, for giving birth to this most fabulous snack.
It was one of those evenings when dinner was taking longer to put together than one would like and the natives were getting churlish from hunger. I needed a quick solution, so I headed to the fridge and freezer to assess my options, hoping for something tasty and easy that would satisfy without causing anyone to utter those awful words “I’m too full now to eat my supper.”
I keep a stash of frozen, cooked bacon slices on hand. With no time to mince by hand, I put the bacon into my Ninja, along with some just-washed cherry tomatoes and the avocado that was going to be in the salad. (Sorry, salad. I have needs that preempt yours.) Pulse, pulse pulse. Add a tidge of mayo and a few sprinkles of Splenda or sugar. Pulse once or twice more. Resist the urge to over blend. You want distinct textures — creamy avocado, juicy tomato, crunchy bacon. Not pablum.
Two lonely low carb tortillas were camping out in the refrigerator. I warmed them about 6 seconds in the microwave, then I spread my mixture on each tortilla before rolling them up and cutting them into Bacon Avocado Tomato Bites and wandering out of the kitchen with a small platter to satisfy the food lust. Mission accomplished — the churlishness evaporated.
