You know I hate to cook breakfast, even though I love breakfast. Until I win the lottery and have a live-in cook, it’s a real problem for me. My friend Deloris delighted me with her demonstration of an omelette so quick and easy to make that I can do it with my eyes half shut. No stove required. It opens up a world of possibilities.
Ingredients:
- 1/2 cup Egg Beaters (you’ll find them in the refrigerator section of your grocery store, near the eggs and other dairy)
- 1 wedge of Laughing Cow cheese
- Pepper (optional)
You will also need a normal size coffee cup and a microwave.
Directions:
Peruse the selection of flavors of Egg Beaters. Look at your options with the Laughing Cow cheeses. Let your taste buds guide your flavor combinations. Southwest style Egg Beaters with Queso Fresco and Chipotle. Florentine Egg Beaters with Garlic and Herb cheese. Plain Egg Beaters with swiss Laughing Cow. Whatever makes your mouth happy.
Deloris said to spray nonstick spray into the coffee cup first. I’ve tried it with it and without it. I don’t perceive any difference, so I skip that step. Pour a half cup of Egg Beaters into your mug. Unwrap your wedge of Laughing Cow cheese. (I shouldn’t have to tell you that, but one mustn’t make assumptions about what should appear obvious.)
Plop your wedge of cheese into the cup. Place it into the microwave. Microwave it for a minute and 15 seconds. Take a spoon and turn the ball of egg upside down. If there is still liquid, put it in for a few more seconds. Microwave power varies from one to the next, so you will have to ascertain what the perfect time length is for you. For mine, it’s 1 minute, 30 seconds, then another 7 seconds.
Plop onto the plate. Add a little garnish, if you care to. If you have bacon, sausage, ham, breakfast fruit, adorn the plate with them. You’ll find the cheese has softened immeasurably, but is still intact in the middle. If you’re awake enough, you can work on getting a small bit of cheese with every bite.
