Turning a boring rotisserie chicken into a crunchy curried chicken salad that is crunchy and crazy easy is my favorite kind of magic trick. Hunger disappears!
Ingredients:
- 2 cups rotisserie chicken breast, taken off the bone, shredded, lightly chopped
- 2 cups chopped celery
- 1/4 cup shredded carrots (leave some to garnish with)
- 1/2 cup mayonnaise
- 1 tbsp. curry powder
OPTIONAL: one packet Splenda or 2 tsp. sugar. (Don’t use either if you’re someone who prefers sweet to savory.)
OPTIONAL: two or three cashews or walnut halves to garnish.
Directions:
Mix all the ingredients together except a small amount of carrot shreds that you reserved for garnish. Top with the garnish(es) and you’re ready to eat.
Serve in cute little bowls — or you can tuck the curried chicken salad into a curved little “cup” made from some radicchio. You could also serve the salad on a bed of butter lettuce or on top of a leaf of romaine.
