Ingredients:
- Fresh jalapeños
- ground pork
- onion
- egg
- Carbquick or flour
- Canola oil (for frying)
Put on your food prep gloves before you take another step. If you have ever gotten jalapeño oil where it’s not supposed to be, you understand how smart this advice is. Split the jalapeños down the sides. Remove all or most of the seeds –depending on your tolerance for spiciness.
Finely chop your onion and saute it a little before adding your ground pork. Cook the pork and onion mixture. Stuff the jalapeños with the cooked pork. Dip them in a beaten egg. Roll in Carbquick or flour that has been seasoned with a little salt and pepper. Do it a second time.
Heat oil to 375 degrees (medium high). Carefully place your stuffed jalapeños into the hot oil and fry until the coating is nicely browned. Pull them out and let them drain on paper towels. Serve with something sweet, like a Thai Sweet Chili Sauce for a nice counterpoint.
