
Ingredients:
- Chicken wings (I usually get the ones that have the pieces detached, but these weren’t and that was fine)
- olive oil
- Durkee Citrus Grill seasoning or a seasoning rub of your choice — Salt Sisters has a Florida Citrus seasoning that would be excellent
- Pepper Jelly (we sell the ala carte Alice 5 Pepper Jelly at Capers and it is excellent!)
Ingredients:
A day or two before you plan to serve the wings, wash them, dry them, coat them with a thin coat of olive oil, then liberally shake on the Citrus Grill seasoning. Allow to set in the refrigerator at least overnight, if not longer, preferably uncovered because you want the skin to dry out.That is the secret to crispy wings. 
Preheat oven to 400 degrees. Place the wings on a foil-covered cookie sheet that has been sprayed with Pam or something similar. Bake for 40 minutes in total, turning them over halfway through. Don’t overcrowd them on the cookie sheet, and drain off excess grease at the halway point, if you need to. Cook until the meat thermometer registers 180 – 195 degrees Fahrenheit for crispy chicken.

As soon as they come out of the oven (when they are a yummy shade of brown), throw them into a big stainless steel pan with a couple of tablespoons of pepper jelly. Put your gloves on and make the jelly friendly with the chicken until it’s nicely coated (but not too thickly). Serve with a smile.
