Ingredients:
- Chicken wings (I usually get the ones that have the pieces detached, but these weren’t and that was fine)
- olive oil
- Durkee Citrus Grill seasoning or a seasoning rub of your choice
- Pepper Jelly
Ingredients:
A day or two before you plan to serve the wings, wash them, coat them with a thin coat of olive oil, then liberally shake on the Citrus Grill seasoning. Allow to set in the refrigerator at least overnight, if not longer.
Preheat oven to 400 degrees. Place the wings on a foil-covered cookie sheet that has been sprayed with Pam or something similar. Bake for 40 minutes in total, turning them over halfway through. Don’t overcrowd them on the cookie sheet, and drain off excess grease at the halway point, if you need to.
As soon as they come out of the oven (when they are a yummy shade of brown), throw them into a big stainless steel pan with a couple of tablespoons of pepper jelly. Put your gloves on and make the jelly friendly with the chicken until it’s nicely coated (but not too thickly). Serve with a smile.
