Peppermint Hot Cocoa

Baby, it’s cold outside!  With ice on the tree branches, snuggling under a blanket with a good book or watching a good movie (Oh, who am I kidding?  We are watching endless weather coverage on TV!) — and sipping a warm winter beverage is a dreamy way to pass the morning.  Peppermint hot cocoa.  MMMMMmmmmmmmm.  It’s like a warm hug in a mug.

Procure some starlight mints next time you’re out, along with your favorite hot cocoa mix.  You can use marshmallows, too, if you like, but I prefer a dollop of frozen whipped cream, personally.  [I use sugar-free Swiss Miss and add a packet of Splenda and 1 tbsp. cream for the cocoa and sugar-free starlight mints.  You’ll find my frozen whipped cream recipe elsewhere on the site.  Please note that the sugar-free starlight mints should be used in small quantity because they contain a large amount of sorbitol and too much of it can produce unpleasant side effects.]

Unwrap the beautiful red and white starlight mints and place several of them into a quart freezer bag. You will only need a teaspoon or two of the crumbles, but it would be silly to just do a single serving.  Go ahead and mash up a bunch and keep them on hand so you can retire your meat mallet after you have used its smooth side to beat the mints into submission.

Make your hot chocolate.  Add marshmallows or whipped cream, if you’d like. Sprinkle on shards of peppermint.  Peppermint hot cocoa.  Ahhhhhh.
