My wellness coach, Jamie, was talking to me about making meals and snacks special. I put her advice to the test by making my pimiento cheese snack with vegetables look like a real treat. Somehow, food just tastes better when you aren’t standing in the refrigerator door, grazing. This looked so much more appetizing than if I had just put a little wad of the pimiento cheese on my plate with the veggies. Cheers!
So, drum roll, here’s my recipe: Get in the car, go to your favorite store, buy your favorite pimiento cheese spread and some fresh vegetables to accompany it! Honestly. Make it from scratch if you must, but I happen to like the pimiento cheese at Whole Foods and it is so good that it robs me of any incentive to make it myself! If the variety you can find at your local market isn’t up to standard, try doctoring it up. A little garlic powder, onion powder, maybe a squirt of worcestershire sauce. Figure out what it lacks and add it.
I cut up thin slices of celery and thin slices of red pepper. The magic here is in the way it was served. I took a small glass container and used two spoons to put the cheese at the bottom, then stacked the vegetables on top. I put the little glass on a plate so that I could add some cherry tomato halves (and also to catch any mess I might make. Not that I’m messy. Okay, well maybe I am).
The same concept doesn’t just apply to a cheese snack. It would work with putting some dip (like ranch or onion dip) in the little glass, then adding vegetables. It’s all about the presentation. Elevate your snacks and meals and celebrate every bite.
