Black soybeans are high in fiber, protein, and flavor, but low in carbs. You’ll find them canned in many grocery stores and health food stores, or you can order online. Combined with a colorful assortment of crunchy vegetables, the black soybeans form the base for an amazing salad.
Ingredients:
- black soybeans, 1 can, drained and rinsed
- Cherry tomatoes, halved or quartered
- minced parsley
The following vegetables, chopped:
- Red Pepper
- Purple onion
- Green pepper
- Orange pepper
- Green pepper
(No, you don’t need all of the different colored peppers, but it sure is pretty to have the variety. They are so beautiful together.)
Optional ingredients:
- zucchini
- yellow squash
- cucumber
Directions:
Toss with — guess what — our Essential Vinaigrette or a vinaigrette of your choice.
Don’t add the dressing until right before you serve the salad. If you have leftovers (don’t bet on it), add additional dressing before you allow this salad to make its second debut.
