This was a serendipitous discovery. All along, I had been planning to add feta cheese and strawberries to a spinach salad I would be serving for lunch. The strawberries were hulled and sliced, the feta cheese was crumbled. The vinaigrette was made, but when it came time to pull everything together, I discovered my spinach had turned slimy, even though its expiration date had not arrived. Panicked, I frantically searched the refrigerator for something — anything — to make a salad with. I found a package of broccoli slaw, threw everything together, and the rest is (tasty) history. We were all amazed.
Ingredients:
- 1 bag of broccoli slaw (or homemade broccoli shreds with a few carrot shreds and purple cabbage thrown in, if you have them)
- Strawberries, sliced
- Feta cheese, crumbled
- Balsamic vinaigrette
Directions: Throw the ingredients into a bowl, top with your vinaigrette and toss ever so gently. I’m serious about the gentle part. If you start stirring or doing spoon aerobics, your cheese is going to get all over everything, your strawberries are going to start breaking down, and your salad is going to be ugly. Quit it. Gentle, I say.
