Pretend you’re in arts and crafts class. Take long strips of cucumber and fashion a bowl out of them. Fill with a salad mixture. Get your gold star for the day!
Ingredients:
- English cucumber or other large cucumber with small seeds
- Salad mixings of your choice
- Colorful accent ingredients, such as avocado, shredded carrots, crispy shallots
- Salad dressing (apply to the salad before placing the salad into the cucumbrer bowl
Wash your cucumber. Then, using the vegetable parer with the widest opening, pare off thin strips all the down the length of the cuke. Stand a slice on end. Wind it into a hollow circle. Reinforce it with another strip.
Make your salad. Here, I used some of the baby lettuce greens from my garden. Whatever you use, tear it or cut it into small pieces and be sure you add things that are colorful. I used some avocado and red onion.
I had purchased some pre-shredded carrot at the Asian store, along with some fried shallots, so I sprinkled those on, too.
Garnish with a small flower, if you choose. Remember: This isn’t a main course salad. This is for when someone wants just a bit of rabbit food.
