Ingredients:
- Red pepper
- Green pepper
- Yellow pepper (Yes, you could use just one color, but it wouldn’t be nearly as appealing to the eye.)
- Fresh basil, cut into thin “ribbons” (in a pinch, you can use basil from a jar)
- 1/2 cup crumbled goat cheese
- Cracked black pepper
Dressing:
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. brown sugar (we use Diabetisweet version)
Cut the peppers into large chunks, approximately 4 per pepper, avoiding the seeds. Lightly coat with a little oil. Grill at 400 degrees on your grill until the peppers have just a small amount of char on each side.
Arrange on a platter. Sprinkle with the goat cheese and basil. Mix the dressing until it is well-blended. Drizzle on the dressing. Top with a little black pepper from your pepper grinder (optional). Serve warm.
This is a beautiful side dish which makes a great accompaniment to just about any main course.
