On a daily basis, I try to avoid white sugar and white flour. Because of Splenda and other wonderful products, I am able to make just about everything I want, but this sandwich really requires regular cinnamon raisin bread. I made these last night when I invited Matthew and Margaret (both of whom are originally from the east coast and thus very curious about the tornados we experience in Oklahoma) over for a screening of the classic movie Twister. Since Margaret in particular is a little squeamish about the prospect of our weird weather, I thought it was important to have a small buffet of comfort food to put us in a good frame of mind before we watched flying cows and houses. I only have these about once a year, but when I do I always think they are the world’s best sandwich.
Ingredients
- Cinnamon Raisin Bread
- Mayonnaise
- Splenda
- Bacon
- Avocado
- Tomatoes
Fry the bacon until crisp, then drain it. Cut the crust off the bread. Mix mayo with Splenda to sweeten. (I use 1 packet of Splenda for each 1/2 cup mayo.) Thinly slice the avocado.
Spread the mayo mixture on the bread. Heap on the bacon, avocado and sliced tomatoes. Place the remaining slice of bread on top. Squish the sandwich together by pressing on the top piece of bread until the sandwich is firmly together. Your goal is to keep the individual components from falling out and creating a mess all over your guests.
Slice at a diagonal. Arrange on your serving platter.
