Instead of ordering a gyros sandwich from my local Greek place, I like to get a pound of two of just the gyros meat. I drain off the grease and make my own sandwich with a low carb tortilla and my own dressing. The nice thing is that the meat freezes quite well and provides a good foundation for a yummy and unusual snack or party hors d’oeuvre that goes together in minutes.
Ingredients:
- Gyros Meat
- Tortilla crackers or pita chips
(Note: If you use tortilla crackers, you might want to use some mediterranean seasonings and a little garlic salt for flavor) - Greek yogurt
- cucumber, finely diced or julienned
- red onion, finely diced
- lemon juice
- cherry or cherub tomatoes
- salt and pepper
Directions: Place a large dollop of Greek yogurt into a bowl. Add cucumber in about the same proportion as the yogurt. Add about half as much red onion. Mix well. Add a squirt of fresh lemon juice. Stir. Add salt and pepper to taste. (That means TASTE IT — adjust the flavors and proportions until you get the mixture you like. Add a little garlic salt, if you care to, or a few red pepper flakes, if you dare. If it tastes good to you, you are ready for the next step.)
Place a dollop of the yogurt mixture on top of the chip or cracker.
Add the piece of gyros meat on top.
Top it with a piece of cherry tomato.
Next time I might change up the order a bit and put the meat on top of the chip, then the yogurt, then the tomato. I will let you know how it comes out!
