I’m putting this up for two reasons: First, it’s one of those quick and simple things we sometimes forget about. Second, if you’ve traditionally made stuffed celery with the icky peanut butter you used to spread on white bread when you were a little kid, you need to try the “adult” version with slightly sweetened natural peanut butter. Totally different!
Filling Ingredients:
- Natural peanut butter (or try it with almond butter, for a change of pace)
- Splenda (or sugar or sweetener or your choice)
- Clean crisp celery
Directions:
Wash your celery, trim the ends, and allow the celery to chill in very cold water while you add just a little sweetener to the natural peanut butter, to taste.
Dry the celery (the peanut butter won’t stick if you don’t!), then fill each stalk with peanut butter. Once you have filled each stalk, cut into the size of your choice. I like to cut them 3 to 4 inches long. Some people prefer smaller bites, but then you keep grabbing for more, so why not start with a more reasonable length?
