It was tempting to put this under desserts, rather than side dishes, because these small sweet peppers get sweet as candy when grilled with just a little olive oil on the exterior. They couldn’t be easier to make and they disappear so fast, you’d better grab yours first!
- Sweet Mini-peppers (that’s what the packaging calls them!)
- Olive oil
Fire up your grill to medium high heat!
Wash the little peppers and coat them with olive oil. (I typically put them into the colander in the sink to accomplish this task, then set them on a cookie sheet to carry out to the grill.) If you have a grill basket, use it. Otherwise, prepare for some exercise, because you will be chasing these suckers around the grill a bit. Cook them until slightly charred on both sides. Plate ’em and serve ’em. How easy is that?!?
