I love Scottsdale. Look one way and you’ll see lush lawns, petunias. Look another way and you’ll see cacti and desert landscape. There’s something for everyone. During our most recent visit, the weather was amazing (as usual).
The first day we arrived, we headed to Trader Joe’s to stock our hotel room refrigerator with healthy munchies. They sold a guacamole “kit” so, armed with a paring knife, I made fresh guac, cut up some persian cucumbers, and washed some baby carrots and strawberries. I added some peppered salami for a bit of meat and some flavored hummus for an alternative dip. Instant edibles — on the road!
Healthy snacks!
The hotel room our friend Ken got was huge. For no apparent reason, it had a large dining room table, but no kitchen sink. Just a dry bar. Nonetheless, after a very long day (we got up at 4:00 to catch our flights), ordering room service and eating it in style sounded like a great idea, so that’s what we did.
Sometimes, you have to get creative with the room service menu. I wasn’t in the mood for anything heavy, so I ordered the turkey sandwich without the bread (but with the oregano dressing) and with a side of broccolini, rather than the fries that would have normally accompanied the sandwich. It was a wonderful light meal.
Nestled in my poolside cabana, I ordered the vegetable crudite platter. While I’m not normally a fan of plastic plates, they are certainly appropriate near the pool and, thank goodness, they were not white. I was hot and the veggies were cold and crisp. Fresh jicama, carrots, celery, red pepper strips, and a couple of pepperoncinis thrown in. Hummus, dill-flavored ranch, and salsa were the accompaniments.
“Do I look relaxed? I may not be a sun person, but if I can sit in shade and enjoy the beauty of the great outdoors, I’m a very happy girl.”
