The minute I tasted this, I wondered “Why don’t I make tuna salad more often?” Few dishes come together as quickly and easily, and it always tastes so fresh. In this version, I amp up the crunch with tiny pieces of celery, carrot, and onion.
Ingredients:
1 large pouch of white albacore tuna (or your favorite tuna)
1/2 cup mayonnaise
1 tsp. Splenda or other sweetener
1/2 cup finely diced celery
1/4 cup finely diced onion
1/4 cup finely diced carrot
Directions:
Mix together all the ingredients. Taste. You may want a little more sweetness, or a bunch more crunch. You may want extra mayo to make it even creamier.
Serve it in something appropriate (and cute). You do want pretty food, after all!
