The weather has been so pleasant that we have been eating every meal outside, just because we can. I urged our new tenant Erica to wander over, meet the gang, and enjoy a bit of lunch. Our color palette was lavender and purple, and 3 of the dishes were experiments of sort. I made the grilled zucchini planks spread with Italian Philadelphia brand cream cheese again, but cut the zucchini thicker this time. I made CC’s mushroom salad, but since I was out of swiss cheese, I used pre-grated fondue cheese mix, instead. (It went over very well!) I made some mac and cheese with a little kick from pepper jack cheese slices. Tasty!
