This was a total experiment, but I was so pleased with the way my air fryer hot chicken salad turned out that I’m sure it will earn a regular place in the meal rotation!
No, I don’t really have a meal rotation.
This dish came to life when I had waited almost too late to fix dinner. What to do, what to do. I had part of a rotisserie chicken in the fridge and a few other odds and ends, so I decided to combine them.
Ingredients:
- Cooked chicken, chopped or shredded into pieces
- Chopped celery
- Chopped shallots (I actually used dried ones)
- Cream cheese (the kind I had was chive and green onion flavored, and I added a little onion powder, garlic powder, cracked black pepper)
- Shredded cheddar cheese
Directions:
Preheat the air fryer to 350 for 2 minutes.
Mix together all the ingredients except a bit of the cheddar cheese that you will use to sprinkle on top.
Place in a small pan (I’ve made it in a 5″ aluminum one, then discovered small ceramic ones work, too)
Top with your remaining shredded cheddar.
Pull the basket out of the air fryer. Plop this pan full of goodness inside, return the basket to the air fryer, and cook 3-4 minutes — just until the ingredients are warmed through and the cheese is melted. Dinner is served!
Here are “before” and after shots of the chicken salad made in a small metal pan. I am so glad I figured out I could instead use a prettier pan, so long as it is oven safe.
