We are so fortunate to have some of the loveliest people in the world as tenants. Recently, Teresa and Matthew invited us to dinner. Because Michael’s back had gotten strained and their apartment is on the second floor above a garage, they ended up bundling everything up and bringing it to our house to serve. The first course, which I view as an appetizer, was such a fabulous combination of crunchy, cream, sweet and savory, and Teresa made it look beautiful, too. She knows we love pretty food!
Ingredients:
- Large crispy chilled apple, cut into thin slices (choose your favorite variety)
- Softened goat cheese spread
- Thin slices of prosciutto
- Sliced almonds
- Basil leaves
Directions:
Just before serving, slice the apple. Spread goat cheese on each one. Artfully arrange the slices on each plate. Sprinkle on sliced almonds. Garnish with two basil leaves. Serve immediately!
