Get out the shot glasses or mini martinis. These look so cool served in them.
- 1 box falafel mix
- 1/4 cup finely diced or shredded cucumber (seeds removed)
- cup plain Greek yogurt
- 1/4 tsp. kosher salt
- 1/8 tsp. garlic powder
- strips of red pepper, green pepper (cut long and thin)
- cherry tomatoes, halved
Make falafel according to package directions. Roll into small balls. Fry in a skillet with a small amount of oil until lightly browned. Drain on a plate lined with paper towels.
Mix the sauce. Put the sauce into the bottom of shot glasses. Spear a falafel ball and a couple of cherry tomato halves on a toothpick. Rest it in the shot glass and place two pepper strips into the shot glass for garnish.
