Ingredients:
- low carb tortillas
- Pizza sauce (use your favorite brand, or just throw some Italian seasonings, minced garlic, salt, pepper, and a little Splenda into some tomato sauce to make your own)
- Alfredo sauce (Yes, you could make your own, but I recommend just buying some in the pasta section of your supermarket)
- Italian cheeses, shredded
Your choice of any or all of the following:
- shredded cooked chicken
- chopped or sliced peppers of different types
- red onion, sliced thinly
- caramelized onions
- pine nuts
- pepperoni
- Italian sausage
- sliced Roma tomatoes
- broccoli, finely chopped
- zucchini or yellow squash (or both), finely chopped or sliced
- fresh herbs — basil, parsley
Preheat the oven to 425 degrees. Place the tortillas on a baking sheet. Spray the top of the tortillas lightly with cooking spray. Then layer on your ingredients.
I like to make a white pizza, as follows:
- tortilla
- thin dusting of cheese
- alfredo sauce
- chicken
- pine nuts
- red onion
- more cheese on top
Another of my favorites is:
- tortilla
- thin dusting of cheese
- pizza sauce
- broccoli
- caramelized onions
- red onion
- squash and zucchini
- pepper strips
- more cheese on top
The possibilities are ENDLESS. A few words to the wise:
- Do not put the toppings on too thick. You want the finished product to have a thin and crisp crust.
- Don’t be afraid to experiment with different combinations of ingredients. Happy accidents please the taste buds!
