Unpack your bags. The guilt trip is over. You can have crackers without piling on the carbs by making them (it’s quick and easy, I promise!) from low carb tortillas.
- Low carb tortillas
- Cooking spray of your choice
Preheat the oven to 400 degrees. Get out a cutting board, the tortillas, and a smallish biscuit cutter or cookie cutter.
Stack up your tortillas and start cutting out your shapes. When I used a fluted round biscuit cutter to cut five rounds, it left an interesting shape in the middle that I decided would also work just fine for crackers. It reminded me of a star shape or a character from Space Invaders. Place the cut-outs on baking sheets.
Make the most of your oven time. Do a big batch. They keep for weeks, if sealed in a baggie.
Spray lightly with cooking spray, then bake for approximately 7 minutes in your preheated oven, until crisp. Allow to cool completely before you bag them up.
Enjoy them with Now You See ‘Em filling, or Smoked Tuna Spread, or any of our other dips and spreads.
