My friend Barb in Wisconsin is an incredible cook. Creative and fearless, she digs right in and leaves culinary miracles in her wake. She made a sugar-free creme brulee cheesecake for me (among other things) last time she was here and I was in heaven. Never before, and never after, have I experienced anything so creamy and flavorful. I’ve tried to recreate it, but her special touch takes it from good to great.
Barb recently saw my Now You See ‘Em Spread, where I commented about how quick it is to make and how pleasing it tastes. She offered up a recipe for a spread that has just 2 ingredients. I couldn’t wait to try it. It is light and yummy and oh-so-quick!
I’m going to experiment and try this with deli roast beef, deli ham, all kinds of things!
Ingredients:
- Smoked turkey
- mayonnaise
Optional ingredients:
- capers
- cherry tomato slices
- minced shallots or scallions
- English cucumbers, sliced
- little dab of sweetener
- sliced sweet gherkins (to place on top)
I started with deli-sliced smoked turkey meat. You could do that, or buy a chunk of smoked turkey — or use some leftover smoked turkey — instead.
Put the turkey into your mini food processor (or chop by hand) and mix with just enough mayo to moisten. Stop. You’re done.
Serve on Low Carb Crackers, eat plain, or topped with capers, as Barb does, or some minced shallots or scallions.
I happened to have an English cucumber, so I sliced it and used the spread to top the slices, adding thin slices of cherub tomatoes on top.
The picture above shows the two ingredient spread being made with deli-sliced ham, rather than turkey. Lovely pink color, don’t you think? I served it with some plain crackers and some low carb tortilla crackers. On the side are thin slices of sugar-free gherkins.
