I never had any desire to try a pizza made of eggs. I would see such things from time to time at buffets (particularly in Las Vegas, for some reason) and would pass them by. Cousin Steve got my attention, however, last week when he walked in and declared that Becky had made him the “best breakfast EVER.” I was all ears and I begged for details. When I made it, I went wild, creating 3 separate variations. I will tell you at the end which one Michael and I liked best.
Ingredients:
- flour tortillas
- eggs
- cream
- salt
- pepper
Plus, your choice of the following to put into your eggs:
- mushrooms, sliced or diced and sautéed
- green pepper, diced and sautéed
- red, diced and sautéed
- red, green, yellow, or white onions, finely chopped and sautéed until tender
- crumbled cooked sausage, either regular, hot or sweet Italian
- chopped cooked bacon
- shredded cooked beef
Topping options:
- Chopped peperoncini peppers
- Diced tomatoes
- Chopped jalapeños
- shredded or sliced cheese of your favorite type
Directions:
Saute any ingredients you want to have in your eggs first.
Get everything out — all the ingredients, toppings, the works. Chop up the ingredients you want in your eggs.
Saute any ingredients you want to have in your eggs in a little olive oil until they are tender.
Go ahead and cut up the toppings you are going to put on top of your scrambled eggs and put your eggs into a bowl.
Whisk your eggs together with a little salt and pepper. Place them into a skillet that has been heated to medium heat.
Cook the eggs low and slow. Add your ingredients part way through. Place your tortillas on a baking sheet and spread the scrambled eggs all over the top of each one.
Top with your choice of toppings. I left one plain, put chopped peperoncinis on one, and put sliced tomatoes on the third. Then I topped them with cheese — each a different type — cheddar, fondue mix, pepper jack. In they went under the broiler for just a couple of minutes. No preheating necessary!

Last, but not least, was our favorite. This was topped with sliced cherry tomatoes and thinly sliced pieces of pepper jack cheese. The flavor was incredible!
