I have been told I eat some odd things for breakfast. This dish doesn’t seem the least bit unusual for me to start the day with, but eat it at lunch if you prefer.
- Low carb bread (or good multi-grain bread)
- brie cheese
- deli-sliced ham
- Sugar-free raspberry preserves
Spread one side of each slice of bread with raspberry preserves. Make a sandwich, using slices of brie and pieces of ham, as thick or thin as you like.
Butter the outsides of the bread. Heat up a nonstick skillet. Place the buttered sandwiches into the hot skillet and cook until lightly browned and the cheese has melted.
I use my microwave grill instead of the stovetop. The advantage is that I don’t have to stand there and watch it. I can heat up the microwave grill for a couple of minutes in the microwave, then stick the sandwiches in and microwave for another 2-3 minutes. If I am not in the room when the microwave shuts off, I won’t return to the wretched smell of burnt toast.
