So refreshing! While I made this particular smoothie with blueberries and lemons, I have since made it with blackberries once and strawberries once. Next I’m going to try one that’s all lemon!
Ingredients:
- Fresh Blueberries that you have frozen (or use frozen ones that you purchased that way)
- Fresh lemon
- Coconut milk, and if you can find it, be sure to get the So Delicious brand — it has two carbohydrates per cup
- Plain Greek yogurt
- Splenda
Directions:
Cut your lemon in half. Place one and a half cups of coconut milk into a blender. Next, put it in one small container of Greek yogurt.
Place a cup of frozen blueberries into the blender. Add about 1/4 cup of Splenda.
It’s time to add the lemon. I use the juice of one half lemon. You can also add in two or three leaves of mint, but it’s optional. Blend until it’s the color that looks pretty and blended to you. Drink up!
