This is one of the most popular dishes served at my house. It’s Michael’s special chicken, which he cooks on the Big Green Egg. It could be done on any smoker, and it would be good (but not AS GOOD) simply baked in the oven.
- 1 whole roasting chicken — preferably 6 pounds or so
- Olive oil
- Durkee’s Citrus Grill seasoning (If you can’t find it, use another brand of citrus seasoning that’s made for chicken)
Dry your chicken. Preheat your grill to around 275 degrees. Rub olive oil all over the inside and outside of the chicken. Coat it heavy with citrus grill, both on the inside and outside. Bake until the chicken reaches doneness. Let it rest for a few minutes before you cut into it.
