Ingredients:
- 1 10 oz. package peas, thawed
- 1 cup diced celery
- 1 cup chopped or sliced cauliflower (or more — I use 3 cups!)
- 1/4 cup green or red onion
- 1 cup shredded cheddar cheese
- 1 cup cashews (I prefer roasted, salted)
Dressing:
- 1/2 cup sour cream
- 1 cup ranch dressing
- salt and pepper, to taste
Garnish:
- Crisp bacon (optional
Directions: Gently mix all the ingredients together EXCEPT the cashews and the bacon. Mix the dressing together. Toss the salad with the dressing. Allow to chill for at least a couple of hours. Just before serving, stir in the cashews. Top with the crisp bacon (if you so choose). Serve and smile.
