Tomato Tunes

Ingredients:

• Tomatoes, thickly sliced
• Fresh mozzarella
• Basil leaves
• Balsamic glaze
• Kosher salt
• Cracked black pepper

The theme here was music, but it could be anything. Match the cookie cutters you use to cut the cheese with the design you put on the plate with the balsamic glaze. Slice the tomatoes. Cut the mozzarella into an attractive shape. Chiffonade the basil leaves (ribbon cut them, for those of you who want plain English spoken).

Put some glaze underneath where you are going to place the tomatoes. Arrange the tomatoes over the glaze, leaving ample room for a design to be made with glaze elsewhere on the platter. Sprinkle the tomatoes with kosher salt and cracked black pepper. Top with the mozzarella and basil ribbons. Smile and serve.
