- Green beans, lightly steamed
- Shallots, minced
- Roasted red peppers, chopped
- Olive Oil
Steam the green beans to the desired degree of doneness. Meanwhile, sautee the minced shallots in just a bit of olive oil and butter. I had some leftover roasted red peppers from a grilling session the night before, so I chopped those. If you don’t have that luxury and don’t feel like grilling, open a jar of fire-roasted red peppers and use those.
Arrange the hot green beans on a platter. Top with the shallots and red peppers. Serve hot or cold.
