Grilled Fruit

Ingredients:

  • apples or pears or nectarines

For the filling for pears or nectarines:

  • Craisins
  • deluxe mixed nuts (I use the Pistachio Lovers Blend)
  • blue cheese

For the filling for apples

  • Brown Sugar Diabetisweet
  • Splenda
  • nutmeg
  • cinnamon
  • butter
  • raisins (optional)

Scoop out the insides of the fruits you want to use. Into the pear and nectarine goes a mixture of chopped craisins, deluxe mixed nuts (I use the Pistachio Lovers Blend), and blue cheese.

Into the apples go chopped nuts (walnuts or pecans), Brown Sugar Diabetisweet, Splenda, nutmeg and cinnamon, plus a dab of butter. Raisins (optional)


You can stick these right on the grill, but they can also be baked at 350 degrees for 30 minutes to an hour — depending upon how large the fruit is.


The finished product can be quite pretty, but on the apples in particular, make sure you get apples that do well being cooked. Some simply collapse into a pile of mush. Mush is not pretty. You know this. Consult this chart from The Old Farmer’s Almanac if you’re unsure what variety to buy.


Pssssst. If you need to do these in a hurry, microwave them for a while and just put them in the oven or on the grill for a few minutes at the end. Try microwaving for about 6 minutes (for one). Check for tenderness, then adjust and go longer as you see fit.
