Tricolor Cauliflower Mac ‘n Cheese
Purple, lime green, and orange cauliflower. For a change of pace, I used a combination of them to make George Stella’s famous casserole which substitutes cauliflower for pasta to make an amazing (and nutritious!) Mac and cheese.
