Ingredients:
- Zucchini
- Yellow Squash
- Cauliflower
- Red Onion
- Green Bell Pepper
- Red Bell Pepper
- Shredded cheddar cheese
If you put too much of this mixture into the pan, it will start to steam, rather than fry. You want to use a small enough amount of the mixture that it dry fries. What you’re going for is that heavenly cooked cheesy ooze like you get when a grilled cheese sandwich leaks into the frying pan. Quit cooking when the vegetables have reached the degree of doneness that you prefer. Personally, I like mine to have crunch left.
Step 1: Slice all the vegetables thinly in whatever proportion you like. |
Step 2: Mix all the vegetables together in a large bowl. Add shredded cheddar. Again, the amount is up to you. For the amount you see pictured above (which feeds 4 people easily) I used one bag of cheese. |
Step 3: Heat up a large nonstick skillet over medium high heat. Once it’s hot, throw in the vegetable/cheese mixture. Allow it to cook a bit before you start attacking it with a spatula. |
Step 4: Once the cheese has started to melt and the vegetables have started to brown, use a spatula to turn them over and get the other side cooked. Add a little cracked black pepper if you choose. |
